General stuff:
I usually prefer happy, funny stories, but as long as there's a happy ending I don't mind the occasional angst. I love AUs and crossovers and tropes of all kinds, like time loops! Outsider-POV! Weird inexplicable animal transformation/age regression! To name just a few. I'm also really into case fic, so depending on the fandom that's always an option as well.
As for squicks/triggers, please avoid non-con and major character death. Also I have a pretty big embarrassment squick, and a lot of kinks are very hit or miss for me. I'm not really into omegaverse fics right now. Lastly, I don't really like it if there's break-ups with third parties in a story - I wouldn't call it a squick, but I'd prefer to avoid it.
I really, really stick to my OTPs (to the point that I usually can't read stuff where they're paired with other people even if it's just in the background), so I hope there's one among them that you like. Otherwise gen is also fine, of course. If you're looking for inspiration, I have a pinboard where I save everything I read and liked. The <3, * and Awesomeness tags are reserved for my favourite fics.
On to the fandoms! (in no particular order) I've tried to provide some preferences in each case, but please don't feel like you have to stick to exactly what I mention.
General kpop things: blanket permission isn't much of a thing in kpop fandoms, but last year I made a short list of people I personally know have bp or are podfic friendly. You can find it here. I also have blanket permission and would be happy to receive podfic of my own works. If you're looking for pronunciation help, I usually just search for '[name] pronunciation' on youtube, because there are a couple channels who do very helpful videos for this.
In general I'm not big on fics that are set in America for no reason. There are exceptions in my bookmarks, but I prefer fics set in Korea or fics that don't mention a specific setting.
Stray Kids:
Still my main fandom, and Minho/Jisung is still my OTP, but I'm more flexible about pairings involving everyone else. I really like Changbin/Felix, Hyunjin/Seungmin, Seungmin/Changbin and Seungmin/Hyunjin/Changbin. Not super into Chan/Felix tbh but I can handle them as a background pairing. Please no fics that mention Woojin. When in doubt, knight_tracer can probably help you out.
ATEEZ:
Hongjoong/Seonghwa please! I also like Yunho/Mingi and really any combination of background pairings, but I'm really mostly about the seongjoong.
BTOB:
Honestly good luck finding anything to record, but it would feel wrong to leave this fandom off the list because I've been incredibly into Eunkwang/Minhyuk lately. Bonus points for Mayfly interactions in any SKZ, ATZ or BTOB works, of course.
TWICE:
I really really love Dahyun/Sana, but I could go for pretty much any pairing.
Mamamoo:
Yongsun/Byulyi!!!!! Hwasa/Wheein is cute too, but I'm mostly all about unnie line.
ITZY:
I haven't read much fic in this fandom but I like Ryujin/Yeji a lot.
Day6:
Jae/Brian! Sungjin/Wonpil/Dowoon is cute but not a requirement.
NCT:
By NCT I really mostly mean WayV, but there isn't a different fandom tag for that, so. I'm very much into Kun/Ten, so anything about them would be lovely. Aside from that I also like Johnny/Taeyong (can't do these two in other pairings, even if it's just in the background) and Lucas/Jungwoo. Also all the wayv fic I've bookmarked is tagged as nct on my pinboard.
Seventeen:
Seungkwan/Vernon, Mingyu/Wonwoo, and Minghao/Junhui are my favs. For the rest of the band, all combinations of pairings are okay with me.
BTS:
I've stepped back from this fandom a bit, but I still love Namjoon/Jin (bonus points for (one-sided) rivals/enemies-to-lovers), and I really wish there were more podfic for Yoongi/Hoseok.
Fire Emblem: Three Houses:
The Golden Deer is my favourite house, so I'd welcome gen-ish fic about their shenanigans, though I do have a variety of ships I like. Sylvain/Felix, of course, Marianne/Hilda, Ingrid/Dorothea (!!!!), Hubert/Ferdinand, Catherine/Shamir, Caspar/Lindhardt, Claude/Byleth, and recently I have even been known to very much enjoy Claude/Lorenz and Claude/Lorenz/Hilda.
The Witcher:
I don't know a lot about this fandom, but I've seen a bit of the show and enjoy Geralt/Jaskier fic. Renfri is also very cool! For this fandom I like monster of the week style plots, or whatever you want to call 'em, so I'd prefer plot-heavy/case fic.
Haikyuu!!:
Most recently I've been reading a lot of Bokuto/Akaashi fic, so something with them would be great. But all my other pairings still stand: Oikawa/Iwaizumi, Yachi/Kiyoko, Ukai/Takeda, Tsukishima/Yamaguchi, Hanamaki/Matsukawa, Hinata/Kageyama. I haven't read much post-manga (or even just post-timeskip) fic yet, but that's definitely something I'd be interested in.
Jujutsu Kaisen:
I only watched the anime, so my knowledge is limited, but I love the pairing of Nobara/Maki, and I like Fushiguro/Itadori as well. I really can't do Fushiguro/Sukuna though. For other characters, Gojo is fun and Nanami is great.
Gideon the Ninth/The Locked Tomb trilogy:
I've read both books that are out so far, though I haven't read a lot of post-Harrow the Ninth fic yet, and anything Gideon/Harrow would be super welcome! Canon or AU, it's all good.
Six of Crows:
I read the books and watched the TV show, so both source materials are okay. Jasper/Wylan, Kaz/Inej, or gen shenanigans for more of a pre-book setting.
All for the game:
As always, I'd love some Neil/Andrew future fic! Canon levels of violence and issues are okay.
Ace Attorney:
Another one of those fandoms where it's difficult to find stuff, but I love Athena/Simon, Phoenix/Miles, Klavier/Apollo and Mia/Diego. I'd love something set after/dealing with the events AA6 if you can find any. I've also played the first Great Ace Attorney game and am currently playing the second one, so anything with that set of characters would also be very welcome.
This Is How You Lose The Time War:
A bit of a long shot, but I adore this book, so really just about anything for this fandom would be lovely.
The King: Eternal Monarch:
I literally just finished watching this but I'm feeling pretty feral about Yeong/Gon, so.
The Scum Villain's Self-Saving System:
I'm very fond of Mobei-jun/Shang Qinghua fic, the more ridiculous, the better.

2) Do you happen to have talked with jamjoon before? Since I saw them on the "yes probably?" part of your list but I can't tell if they're still active in fandom or if I should try to find another way to contact about permission, since I left a fic comment but I imagine they get inundated with comments on fics...
